The beloved Vietnamese banh mi is winning hearts in the Middle East — with a twist.
To suit local tastes and Islamic dietary rules, chefs in Dubai have swapped traditional pork fillings for lamb and shawarma. The result? A unique fusion that keeps the soul of Vietnamese street food alive while embracing Middle Eastern flavors.


A Vietnamese Classic Reinvented

Banh mi was ranked among the world’s top 100 sandwiches by TasteAtlas, and it has traveled far beyond Vietnam — now popular in Korea, Japan, Europe, and even Saudi Arabia.
In Dubai, chef Nguyen Thanh Cuong, winner of MasterChef Vietnam 2015, helped launch Banh Mi Zon in April. Instead of pork, the shop offers fillings like fish, chicken, beef, and especially lamb — a favorite across the Gulf region.


The Taste of Fusion – Vietnamese Spirit Meets Middle Eastern Spice

“Our lamb banh mi and shawarma banh mi are special,” Cuong explains. “The meat is marinated with cardamom, saffron, cinnamon, garlic, and black pepper — all familiar in Middle Eastern cuisine.”
The lamb is grilled vertically, sliced thin, and tucked into a crisp Vietnamese baguette with rocket leaves, pomegranate, and chicken pâté — replacing the traditional pork version.


The Perfect Balance of Freshness and Flavor

The sauce brings both worlds together: a blend of garlic butter, yogurt or tahini, and Vietnamese-style mayonnaise.
“This adds richness while keeping that signature banh mi harmony of flavors,” says Cuong.
The soft interior and crisp crust of the bread preserve the authentic Vietnamese feel, even as new ingredients are introduced.


Why Dubai Loves Vietnamese Banh Mi

Founder Mina Tran says Dubai diners prefer flavorful, hearty, yet quick meals — a perfect match for banh mi.
“The crispy bread, rich meat, tangy sauce, and fresh vegetables make it convenient and balanced,” she explains.
Each day, Banh Mi Zon serves around 150–200 sandwiches, with lamb being the clear favorite.


Voices from the Middle East

“I was surprised by how tender the lamb was — flavorful, yet light thanks to the fresh herbs,” said Mayed Aljassim, a Dubai resident.
Another customer, Ebrahim Al Haddar from Abu Dhabi, shared:
“Vietnamese banh mi is easy to eat, not heavy, and full of nutrition. It’s perfect for a quick breakfast or lunch.”


Beyond Banh Mi – Sharing Vietnamese Flavors Abroad

Alongside banh mi, diners can enjoy drinks like Vietnamese iced coffee, coconut jelly, or fruit juices.
Chef Cuong also plans to introduce pho, bun bo Hue, and goi cuon to give Dubai a full taste of Vietnam.
“I want to bring my mother’s recipes from her street cart days to the world,” he said.
“It’s about blending two cultures — Vietnam’s warmth and Dubai’s rich culinary spirit.”
